Zucchini filled with mince makes a delicious and a healthy meal. You can use any kind of mince. I have used beef for this recipe.


Ingredients:
  • 6 small zucchini
  • 3 tablespoon oil
  • 200g minced beef
  • 1/2 finely chopped onion


  • 1 clove of garlic, crushed
  • Salt and pepper according to taste
  • 1/2 teaspoon sesame oil
  • Chilli powder according to taste
Preparation:
  • Wash zucchini well.
  • Cut the zucchini in half lengthwise but don't go all the way through to the end to make sure the zucchini is not separated.
  • Scoop out the pulpy centre with a help of a teaspoon and a knife, leaving a narrow space for filling in the mince.
  • Finely chop the pulp.
  • Mix onion, garlic, salt, pepper, chilli powder, sesame oil, finely chopped pulp with the beef mince.
  • Fill the zucchini with the mixture and tie it with a kitchen string.
  • On a medium heat, add the oil in a pan.
  • Put the stuffed zucchini and cover them.
  • Cook them for about 3-4 minutes until the bottom gets brown.
  • Repeat the same process on all the sides.
  • Cut the string and serve.
You may also prepare this in an oven. Preheat the oven to about 190°c. Put the stuffed zucchini for 15-20 minutes in the oven, turning them frequently.

    Thanks Maria! Yes, stuffing vegetables will certainly make a great vegetarian dish. You can also try mashed potato, peas and cellophane noodles. If I make a vegetable stuffing with zucchini, I will post the recipe here.
